Description

A rich and flavorful slow-cooked corned beef dish infused with the deep notes of Guinness stout, perfect for St. Patrick’s Day.


Ingredients

  • 34 pounds corned beef brisket, well-trimmed with pickling spices included or plain
  • 1 can (12 oz) Guinness stout or any dark stout beer (or beef broth for non-alcoholic version)
  • 1 cup beef broth
  • 1 tablespoon yellow mustard seeds
  • 2 tablespoons pickling spices
  • 4 garlic cloves, smashed
  • 1 large onion, quartered
  • 3 large carrots, cut into chunks
  • 1 medium head cabbage, cut into wedges
  • 2 tablespoons butter, melted (or olive oil for dairy-free)
  • Salt and black pepper, to taste

Instructions

  1. Rinse the corned beef under cold water to remove excess brine. Pat dry with paper towels.
  2. Place the quartered onion, smashed garlic cloves, and carrots at the bottom of the slow cooker.
  3. Put the corned beef brisket on top, fat side up. Sprinkle the pickling spices and mustard seeds evenly over the meat.
  4. Pour the Guinness stout and beef broth over the brisket, making sure it covers about two-thirds of the meat.
  5. Cover and cook on low for 480 to 600 minutes until the meat is fork-tender.
  6. Preheat your oven to 425°F (220°C) about 45 minutes before the corned beef is done.
  7. Brush the cabbage wedges with melted butter and season with salt and pepper.
  8. Place the cabbage on a baking sheet and roast for 30-40 minutes, turning once halfway.
  9. Check the corned beef for doneness; if necessary, cook for an additional 30 minutes.
  10. Remove the brisket from the slow cooker and let it rest for 10 minutes before slicing.
  11. Slice the brisket against the grain and serve with the roasted cabbage and cooked carrots.

Notes

Choosing a brisket with good marbling is essential for flavor. Consider adding potatoes or parsnips for a heartier meal.
