- 2 lemons (juiced and zested)
- 1 tablespoon olive oil
- 2 cloves garlic (minced)

- Salt and pepper to taste
- 2 cups chicken broth
- 2 cups rice (such as jasmine or basmati)
- Fresh herbs for garnish (optional)
Instructions
- In a slow cooker, combine the lemon juice, zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
- Add the chicken breasts and coat them well in the mixture.
- Pour in the chicken broth.
- Cover and cook on low for 360-420 minutes or high for 180-240 minutes until the chicken is cooked through.
- About 30 minutes before serving, cook the rice according to package instructions.
- Once the chicken is done, shred it in the slow cooker and stir it into the juices.
- Serve the lemon herb chicken over fluffy rice and garnish with fresh herbs if desired.
Notes
Marinate the chicken for extra flavor for a few hours or overnight. You can add vegetables like carrots or peas for added nutrition.
