Ingredients

  • 1 pound ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 cups beef or chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onions, diced
  • 1 cup frozen peas or corn (optional)
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine ground meat, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper to form meatballs.
  2. Place broth, diced tomatoes, carrots, celery, and onions in the slow cooker.
  3. Add meatballs on top of the vegetables.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Stir in frozen peas or corn, if using, during the last 30 minutes of cooking.
  6. Garnish with fresh parsley before serving.
