- 1 pound ground beef or turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 cups beef or chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onions, diced
- 1 cup frozen peas or corn (optional)
- Fresh parsley for garnish
Instructions
- In a bowl, combine ground meat, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper to form meatballs.
- Place broth, diced tomatoes, carrots, celery, and onions in the slow cooker.
- Add meatballs on top of the vegetables.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in frozen peas or corn, if using, during the last 30 minutes of cooking.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, add herbs like basil or oregano. Consider using whole wheat breadcrumbs for a healthier option. Mix and match vegetables as needed.
