A simple and flavorful recipe for pulled chicken made in a slow cooker, perfect for busy weeknights.

- 1 – 1.5 lb. boneless skinless chicken breasts
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/8 teaspoon ground paprika
- 1 teaspoon Italian seasoning
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2/3 cup BBQ sauce (divided)
- 3 tablespoons water or chicken broth
- 1 teaspoon apple cider vinegar
- 2 cups favorite slaw mix
- 1/4 medium red onion (thinly sliced)
- 1 tablespoon pickle juice
- 1/2 tablespoon lime juice
- Salt (to taste)
- 4 hamburger buns of choice
- 1/4 cup BBQ sauce (or more to taste)
- Pickles (to taste)
Instructions
- Begin by placing the boneless chicken breasts in your slow cooker.
- In a small bowl, mix together the chili powder, garlic powder, paprika, Italian seasoning, salt, and pepper. Sprinkle this spice blend evenly over the chicken.
- Pour 1/3 cup of BBQ sauce over the chicken, along with the water or chicken broth and apple cider vinegar.
- Cover the slow cooker with its lid and set it to cook on low for 360 to 480 minutes, or on high for 180 to 240 minutes. The chicken should be tender enough to easily shred with forks when it’s done.
- Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the remaining BBQ sauce.
- For the slaw, combine the slaw mix, thinly sliced red onion, pickle juice, lime juice, and salt to taste in a bowl. Toss well to combine.
- To serve, pile the pulled chicken onto hamburger buns and top with your prepared slaw and pickles. Enjoy your hearty meal!
Notes
For best results, use thick boneless chicken breasts, and feel free to experiment with different BBQ sauces and toppings.
