Description
A creamy and flavorful dish that combines tender chicken, sweet corn, and delicious cheeses, perfect for busy weeknight dinners.
Ingredients
Scale
- 1 lb Boneless Chicken Breasts or Thighs
- 2 cups Corn (fresh grilled, frozen, or canned)
- 4 oz Cream Cheese
- 1/3 cup Cotija Cheese
- 1 Lime (freshly squeezed juice)
- 2 cloves Garlic (minced)
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Onion Powder
- Fresh Cilantro (optional)
Instructions
- Prepare the Chicken: Start by placing your boneless chicken at the bottom of the slow cooker.
- Add Corn: Next, add the corn over the chicken.
- Mix in Cheese and Spices: In a separate bowl, combine the cream cheese, diced lime, minced garlic, chili powder, smoked paprika, and onion powder. Stir until well mixed, then pour this mixture over the chicken and corn.
- Cook: Cover the slow cooker and cook on low for 360-480 minutes or high for 180-240 minutes. The chicken should be tender and easy to shred with a fork.
- Finishing Touches: Once cooked, stir in Cotija cheese and adjust seasoning if needed. Serve warm garnished with chopped cilantro if desired!
Notes
Choose chicken thighs for a juicier outcome, and feel free to add black beans or jalapeños for extra flavor.
