- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- Add the rice, black beans, corn, diced tomatoes, taco seasoning, chicken broth, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Before serving, shred the chicken in the slow cooker and stir in the cheddar cheese and cilantro.
- Serve warm.
