Description

A delicious and easy meal that combines tender chicken, fluffy rice, and flavorful toppings cooked together in a slow cooker.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the rice, black beans, corn, diced tomatoes, taco seasoning, chicken broth, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Before serving, shred the chicken in the slow cooker and stir in the cheddar cheese and cilantro.
  6. Serve warm.
