- 4 boneless, skinless chicken breasts
- 1 cup teriyaki sauce
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger (or 1 teaspoon dried ginger)
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch (optional, for thickening)
- 1 tablespoon water (optional, for thickening)
- 1 cup chopped green onions (for garnish)
- Sesame seeds (for garnish)
- Cooked rice (for serving)
Instructions
- Place the chicken breasts in the slow cooker.
- In a bowl, mix together the teriyaki sauce, minced garlic, minced ginger, and sesame oil.
- Pour the sauce mixture over the chicken, ensuring it’s well coated.
- Cover the slow cooker and cook on low for 360 minutes or high for 240 minutes until the chicken is tender and fully cooked.
- If you want a thicker sauce, mix the cornstarch and water in a small bowl. About 30 minutes before serving, add this mixture to the slow cooker and stir gently.
- Once done, shred the chicken with two forks, mix it back into the sauce, and allow it to rest for a few minutes before serving.
- Serve the teriyaki chicken over cooked rice and top with chopped green onions and sesame seeds.
Notes
For added nutrition, feel free to add vegetables such as bell peppers or broccoli during cooking. Leftovers can be stored in the refrigerator for up to 4 days or frozen for 2-3 months.
