- 4 skin-on chicken thighs (about 1.5 lbs)
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 2 tsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 2 tbsp soy sauce
Instructions
- Season the chicken thighs with salt, pepper, and smoked paprika. Let them sit at room temperature for 15-20 minutes.
- In a large skillet over medium heat, add olive oil and sauté onions until translucent, about 5 minutes. Then, add minced garlic and cook for another minute.
- Add the chicken thighs skin-side down in the skillet and brown for 5 minutes on each side.
- Remove the chicken, add flour to the drippings, stir to create a roux, and cook for 1-2 minutes until lightly browned.
- Gradually whisk in chicken broth and soy sauce, then pour in heavy cream and stir until thickened.
- Return chicken thighs to the skillet, cover, and simmer on low heat for 20-25 minutes until cooked and tender.
Notes
Letting the chicken rest after seasoning enhances flavor. Use bone-in thighs for better juiciness. If you want thicker gravy, increase cooking time after adding cream.
