  • 4 skin-on chicken thighs (about 1.5 lbs)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 2 tbsp soy sauce

Instructions

  1. Season the chicken thighs with salt, pepper, and smoked paprika. Let them sit at room temperature for 15-20 minutes.
  2. In a large skillet over medium heat, add olive oil and sauté onions until translucent, about 5 minutes. Then, add minced garlic and cook for another minute.
  3. Add the chicken thighs skin-side down in the skillet and brown for 5 minutes on each side.
  4. Remove the chicken, add flour to the drippings, stir to create a roux, and cook for 1-2 minutes until lightly browned.
  5. Gradually whisk in chicken broth and soy sauce, then pour in heavy cream and stir until thickened.
  6. Return chicken thighs to the skillet, cover, and simmer on low heat for 20-25 minutes until cooked and tender.

Notes

Letting the chicken rest after seasoning enhances flavor. Use bone-in thighs for better juiciness. If you want thicker gravy, increase cooking time after adding cream.
