Description

Delightful cookies combining warm, spicy flavors perfect for the holiday season. These Soft & Chewy Gingerbread Men bring joy to kitchens and can be customized for any occasion.


Ingredients

  • 3 1/4 cups all-purpose flour (plus more for rolling)
  • 1 1/2 tablespoons ground ginger
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg, room temperature
  • 2 1/2 cups powdered sugar
  • 4 tablespoons warm water
  • 2 tablespoons meringue powder
  • 1/2 teaspoon cream of tartar
  • Sprinkles of your choice

Instructions

  1. In a large bowl, mix together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  2. In another bowl, beat the butter and brown sugar together until light and fluffy.
  3. Add the molasses and egg to the butter mixture and mix well.
  4. Gradually add the dry mixture to the wet mixture and stir until a dough forms.
  5. Divide the dough into two balls, wrap in plastic wrap, and refrigerate for at least one hour.
  6. Preheat your oven to 350°F (175°C).
  7. Roll out one ball of dough on a floured surface to about 1/4 inch thick. Cut out gingerbread men shapes.
  8. Place the cookies on a parchment-lined baking sheet and bake for 8-10 minutes.
  9. Let the cookies cool on a wire rack.
  10. For the royal icing, mix powdered sugar, warm water, meringue powder, and cream of tartar until smooth.
  11. Decorate with royal icing and add sprinkles.

Notes

Chill the dough for better shape retention while baking. Avoid overbaking for chewy cookies.
