Description

Delicious rolls that combine the tangy flavor of sourdough with rich chocolate, perfect for breakfast or dessert.


Ingredients

  • 200 g whole milk
  • 100 g sourdough starter, active and bubbly
  • 70 g cane sugar
  • 1 large egg, room temperature
  • 430 g bread flour
  • 5 g sea salt
  • 8 tbs unsalted butter, room temperature (113 g)
  • 1/2 cup cane sugar
  • 2 tbs cocoa powder, unsweetened
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup whole milk
  • 1/4 cup cocoa powder, unsweetened
  • 1 cup powdered sugar
  • 1 tsp vanilla

Instructions

  1. In a bowl, combine whole milk, sourdough starter, and sugar. Add the egg and mix well. Gradually add bread flour and salt, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
  3. Place the dough in a greased bowl, cover it, and let it rise in a warm place for 4-6 hours or until it has doubled in size.
  4. Roll the dough into a rectangle. Spread room temperature butter on top. Mix together cane sugar and cocoa powder and sprinkle it over the butter. Add chocolate chips evenly on top.
  5. Roll the dough tightly into a log and cut into slices for your rolls.
  6. Place the rolls in a greased baking pan. Cover and let them rise again for about 1-2 hours until they puff up.
  7. Preheat your oven to 350°F (175°C) and bake the rolls for 20-25 minutes until golden.
  8. For the frosting, whisk together whole milk, cocoa powder, powdered sugar, and vanilla. Drizzle over the warm rolls.

Notes

Serve warm with a drizzle of frosting. Pairs well with coffee, tea, or fresh fruit.
