Ingredients

  • 3 cups roasted sweet potatoes, mashed
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows
  • 1 cup pecans, chopped
  • 1/4 cup maple syrup (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the mashed sweet potatoes, 1/2 cup maple syrup, brown sugar, raisins, cinnamon, nutmeg, and salt until well combined.
  3. Spread the sweet potato mixture into a greased 9×13 inch baking dish.
  4. Sprinkle mini marshmallows over the top.
  5. In a separate bowl, mix the chopped pecans with 1/4 cup maple syrup, then sprinkle this mixture over the marshmallows.
  6. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
