- 3 cups roasted sweet potatoes, mashed
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1/2 cup raisins
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 cups mini marshmallows
- 1 cup pecans, chopped
- 1/4 cup maple syrup (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the mashed sweet potatoes, 1/2 cup maple syrup, brown sugar, raisins, cinnamon, nutmeg, and salt until well combined.
- Spread the sweet potato mixture into a greased 9×13 inch baking dish.
- Sprinkle mini marshmallows over the top.
- In a separate bowl, mix the chopped pecans with 1/4 cup maple syrup, then sprinkle this mixture over the marshmallows.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
- Serve warm and enjoy!

For the best flavor, use fresh roasted sweet potatoes instead of canned. Adjust sweetness to your taste and consider adding citrus zest for a refreshing twist.
