Description

A delightful casserole combining roasted sweet potatoes and rich maple syrup, perfect for holiday gatherings.

Ingredients

Scale
  • 4 cups roasted sweet potatoes
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups mini marshmallows
  • 1/2 cup chopped pecans
  • 2 tablespoons maple syrup (for topping)
  • 1 tablespoon coconut oil or vegan butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the roasted sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg.
  3. Mash the mixture until the desired consistency is reached (chunky or smooth).
  4. Spread the sweet potato mixture into a greased baking dish.
  5. Top with mini marshmallows and a mixture of chopped pecans and maple syrup.
  6. Bake in the preheated oven for 25–30 minutes or until heated through and the marshmallows are golden brown.
  7. Serve warm as a delicious side dish during the holidays.

Notes

Choose firm, smooth sweet potatoes for the best flavor. Roasting enhances sweetness; mash to your preferred texture, and watch the marshmallows closely as they bake.
