- 2 cups mini marshmallows

- 2 tablespoons maple syrup (for topping)
- 1 tablespoon coconut oil or vegan butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the roasted sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg.
- Mash the mixture until the desired consistency is reached (chunky or smooth).
- Spread the sweet potato mixture into a greased baking dish.
- Top with mini marshmallows and a mixture of chopped pecans and maple syrup.
- Bake in the preheated oven for 25–30 minutes or until heated through and the marshmallows are golden brown.
- Serve warm as a delicious side dish during the holidays.
