Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat and sauté the chopped onion until translucent.
  2. Add the diced potatoes and stir for a few minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
  5. Stir in the milk and season with salt and pepper.

Notes

For a creamier texture, add more milk or sour cream. Use homemade chicken broth for more flavor.
