Description

A delicious and healthy meal that combines bold Southwest flavors with ground beef and sweet potatoes, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil
  • Chopped cilantro for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced onions and bell pepper, and sauté until soft.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground beef, cooking until browned.
  5. Mix in the diced sweet potatoes, chili powder, cumin, salt, and pepper.
  6. Cover and cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
  7. Stir in the black beans and cook for another 5 minutes.
  8. Serve hot, garnished with chopped cilantro.

Notes

Store leftovers in an airtight container for up to 3-4 days. Reheat on the stove or in the microwave. For a vegetarian version, substitute beef with crumbled tofu or tempeh.
