- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil
- Chopped cilantro for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced onions and bell pepper, and sauté until soft.
- Stir in the minced garlic and cook for an additional minute.
- Add the ground beef, cooking until browned.
- Mix in the diced sweet potatoes, chili powder, cumin, salt, and pepper.
- Cover and cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
- Stir in the black beans and cook for another 5 minutes.
- Serve hot, garnished with chopped cilantro.
Notes
Store leftovers in an airtight container for up to 3-4 days. Reheat on the stove or in the microwave. For a vegetarian version, substitute beef with crumbled tofu or tempeh.
