Turn up the heat with this spicy sausage lasagna soup — a crockpot favorite with creamy ricotta, mozzarella, and bold tomato flavor.
Ingredients
1 lb spicy Italian sausage
1/2 onion, diced
1 tbsp garlic, minced
1 can (28 oz) crushed tomatoes
1 can (14.5 oz) fire-roasted diced tomatoes
4 cups chicken broth
1 tsp Italian seasoning
1/2 tsp red pepper flakes
10 oz lasagna noodles, broken
1 cup mozzarella
1/2 cup parmesan
1 cup ricotta (for topping)
Salt and pepper to taste
Fresh basil
Instructions
1. Brown sausage with onion and garlic.
2. Transfer to crockpot with tomatoes, broth, seasoning, and red pepper.
3. Cook on LOW 5–6 hours or HIGH 3–4 hours.
4. Add noodles and cook 30–40 minutes on HIGH.
5. Stir in mozzarella and parmesan.
6. Top each bowl with ricotta and basil.
Notes
Use mild sausage if sensitive to spice.
Add more red pepper flakes to taste.
Ricotta balances heat beautifully.
