- 2 cups Baby Spinach (finely chopped; kale can be substituted)

Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese, olive oil, and egg (or flaxseed mixture). Stir until well blended.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the cottage cheese mixture, stirring until just combined.
- Gently fold in the chopped spinach and mozzarella cheese until evenly distributed.
- Form the mixture into bagel shapes and place on the baking sheet.
- Bake for 20–25 minutes or until golden brown and cooked through.
