- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- ½ teaspoon onion powder
- ½ teaspoon Italian seasoning
- Salt and pepper, to taste
- Olive oil, for cooking
- Optional: grated Parmesan cheese for topping
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine spinach, cream cheese, mozzarella, garlic, onion powder, Italian seasoning, salt, and pepper.
- Carefully make a pocket in each chicken breast using a sharp knife.
- Stuff each chicken breast pocket with the spinach mixture.
- Heat a large oven-safe skillet over medium-high heat and drizzle with olive oil.
- Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes until cooked through.
- If desired, sprinkle grated Parmesan cheese a few minutes before they finish baking.
- Let chicken rest for 5 minutes before slicing and serving.
Notes
Use fresh spinach for better texture; soften cream cheese for easier mixing. Ensure chicken reaches 165°F (75°C) internally.
