Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Optional: grated Parmesan cheese for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine spinach, cream cheese, mozzarella, garlic, onion powder, Italian seasoning, salt, and pepper.
  3. Carefully make a pocket in each chicken breast using a sharp knife.
  4. Stuff each chicken breast pocket with the spinach mixture.
  5. Heat a large oven-safe skillet over medium-high heat and drizzle with olive oil.
  6. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  7. Transfer the skillet to the oven and bake for 20-25 minutes until cooked through.
  8. If desired, sprinkle grated Parmesan cheese a few minutes before they finish baking.
  9. Let chicken rest for 5 minutes before slicing and serving.

Notes

Use fresh spinach for better texture; soften cream cheese for easier mixing. Ensure chicken reaches 165°F (75°C) internally.
