Description

Ingredients

  • 1/2 cup Greek yogurt
  • 1/2 cup milk
  • 2 large eggs

  • 1 teaspoon vanilla extract
  • 1/2 cup dye-free sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the Greek yogurt, milk, eggs, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Fold in the dye-free sprinkles gently.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
