Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the Greek yogurt, milk, eggs, vegetable oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Fold in the dye-free sprinkles gently.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
