  • 190 g all-purpose flour
  • 75 g natural cocoa powder

  • 115 g unsalted butter (melted)
  • 100 g light-tasting oil
  • 100 g granulated sugar
  • 100 g brown sugar
  • 2 large eggs (room temperature)
  • 330 g milk (room temperature)
  • 250 g cream cheese (softened to room temperature)
  • 115 g unsalted butter (softened to room temperature)
  • 100 g powdered sugar
  • 70 g strawberry jam
  • 1 teaspoon vanilla extract
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved, for decoration)

Instructions

  1. Make the Strawberry Jam: In a saucepan over medium heat, combine the strawberries, sugar, and water. Cook for about 10-15 minutes until the mixture thickens. Remove from heat and let cool.
  2. Prepare the Chocolate Cake: Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. In another large bowl, mix melted butter, oil, and both sugars until blended. Add the eggs and milk, and mix well. Gradually add the dry ingredients, mixing until smooth. Divide the batter into the pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Cool the cakes for 10 minutes in the pans and then transfer to a wire rack.
  3. Make the Strawberry Cream Cheese Frosting: Beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar, then stir in the strawberry jam, vanilla extract, and diced strawberries.
  4. Assemble the Cake: Once the cakes are cool, place one layer on a serving plate and spread a generous amount of frosting on top. Add the second layer, frost the entire cake, and garnish with halved strawberries.

Notes

Serve the cake at room temperature. It pairs wonderfully with vanilla ice cream or whipped cream.
