- 2 cups Cake Flour
- 1.5 cups Granulated Sugar
- 1 tablespoon Matcha Powder
- 1.5 teaspoons Baking Powder
- 0.5 teaspoon Fine Salt
- 0.5 cups Unsalted Butter
- 3 large Egg Whites
- 1 cup Sour Cream
- 0.5 cups Vegetable Oil
- 1 teaspoon Vanilla Extract
- 1 teaspoon Electric Green Gel Food Coloring
- 3 large Egg Whites
- 1 cup Strawberry Jam
- 2 tablespoons Fresh Lemon Juice
- 0.5 cups Freeze-dried Strawberry Powder
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans or line them with parchment paper.
- Combine the cake flour, granulated sugar, matcha powder, baking powder, and salt in a large mixing bowl.
- Whisk until well combined.
- Cream together the unsalted butter and granulated sugar until light and fluffy.
- Gradually add in the egg whites, sour cream, vegetable oil, and vanilla extract.
- Mix until smooth.
- Gradually add the dry ingredients to the wet ingredients.
- Mix until just combined.
- Divide the batter equally between the prepared cake pans.
- Smooth the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for about 10 minutes, then transfer them to a wire rack.
- Prepare the frosting by whisking together the strawberry jam, fresh lemon juice, and freeze-dried strawberry powder.
- Spread a layer of frosting on one cake layer, place the second layer on top, and cover the top and sides with remaining frosting.
- Slice and enjoy!
Notes
Use room temperature ingredients for a smoother batter. Don’t overmix once combining wet and dry ingredients.
