Description

A refreshing fusion of earthy matcha and sweet strawberries, this delightful strawberry matcha cake is perfect for any occasion.


Ingredients

  • 2 cups Cake Flour
  • 1.5 cups Granulated Sugar
  • 1 tablespoon Matcha Powder
  • 1.5 teaspoons Baking Powder
  • 0.5 teaspoon Fine Salt
  • 0.5 cups Unsalted Butter
  • 3 large Egg Whites
  • 1 cup Sour Cream
  • 0.5 cups Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Electric Green Gel Food Coloring
  • 3 large Egg Whites
  • 1 cup Strawberry Jam
  • 2 tablespoons Fresh Lemon Juice
  • 0.5 cups Freeze-dried Strawberry Powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans or line them with parchment paper.
  3. Combine the cake flour, granulated sugar, matcha powder, baking powder, and salt in a large mixing bowl.
  4. Whisk until well combined.
  5. Cream together the unsalted butter and granulated sugar until light and fluffy.
  6. Gradually add in the egg whites, sour cream, vegetable oil, and vanilla extract.
  7. Mix until smooth.
  8. Gradually add the dry ingredients to the wet ingredients.
  9. Mix until just combined.
  10. Divide the batter equally between the prepared cake pans.
  11. Smooth the top with a spatula.
  12. Bake for 25-30 minutes, or until a toothpick comes out clean.
  13. Cool the cakes in the pans for about 10 minutes, then transfer them to a wire rack.
  14. Prepare the frosting by whisking together the strawberry jam, fresh lemon juice, and freeze-dried strawberry powder.
  15. Spread a layer of frosting on one cake layer, place the second layer on top, and cover the top and sides with remaining frosting.
  16. Slice and enjoy!

Notes

Use room temperature ingredients for a smoother batter. Don’t overmix once combining wet and dry ingredients.
