Description

A delicious and fresh Strawberry Spinach Salad with a sweet and tangy poppyseed dressing, perfect for lunches or as a side dish.


Ingredients

  • 10 ounces Baby Spinach Leaves or Mixed Greens
  • 6 Slices of Crispy Bacon (cut into bite-size pieces)
  • 1/4 Red Onion (thinly sliced)
  • 1 lb. Strawberries (sliced)
  • 3/4 cup Feta Cheese Crumbles
  • 3/4 cup Walnuts
  • 1/2 cup Mayonnaise
  • 3 Tablespoons Apple Cider Vinegar
  • 3 Tablespoons Sugar
  • 1 Tablespoon Grated Onion
  • 2 teaspoons Dijon Mustard
  • 1 Tablespoon Poppyseeds
  • Salt and Pepper to taste

Instructions

  1. Begin by cooking the bacon until it’s crispy, then cut it into bite-size pieces.
  2. In a large salad bowl, toss together the baby spinach or mixed greens, bacon, red onion, sliced strawberries, feta cheese, and walnuts.
  3. In a separate bowl or mixer bottle, combine the mayonnaise, apple cider vinegar, sugar, grated onion, Dijon mustard, and poppy seeds. Mix well and add salt and pepper to taste.
  4. Just before serving, toss the salad with the poppyseed dressing to ensure all ingredients are coated.

Notes

For the best flavor, use thick-cut bacon and fresh strawberries. Prepare the dressing in advance for efficiency.
