A delicious and fresh Strawberry Spinach Salad with a sweet and tangy poppyseed dressing, perfect for lunches or as a side dish.

- 10 ounces Baby Spinach Leaves or Mixed Greens
- 6 Slices of Crispy Bacon (cut into bite-size pieces)
- 1/4 Red Onion (thinly sliced)
- 1 lb. Strawberries (sliced)
- 3/4 cup Feta Cheese Crumbles
- 3/4 cup Walnuts
- 1/2 cup Mayonnaise
- 3 Tablespoons Apple Cider Vinegar
- 3 Tablespoons Sugar
- 1 Tablespoon Grated Onion
- 2 teaspoons Dijon Mustard
- 1 Tablespoon Poppyseeds
- Salt and Pepper to taste
Instructions
- Begin by cooking the bacon until it’s crispy, then cut it into bite-size pieces.
- In a large salad bowl, toss together the baby spinach or mixed greens, bacon, red onion, sliced strawberries, feta cheese, and walnuts.
- In a separate bowl or mixer bottle, combine the mayonnaise, apple cider vinegar, sugar, grated onion, Dijon mustard, and poppy seeds. Mix well and add salt and pepper to taste.
- Just before serving, toss the salad with the poppyseed dressing to ensure all ingredients are coated.
Notes
For the best flavor, use thick-cut bacon and fresh strawberries. Prepare the dressing in advance for efficiency.
