- 3 cups cooked shredded chicken
- 3 cups corn (fresh, frozen, or canned)
- 1 cup sour cream
- 1 cup shredded cheese
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked shredded chicken, corn, sour cream, mayonnaise, lime juice, chili powder, garlic powder, paprika, salt, and pepper. Mix well until everything is combined.
- Spread the mixture evenly into a greased casserole dish.
- Sprinkle the shredded cheese on top of the mixture.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden.
- Remove from oven, garnish with chopped cilantro, and serve warm.
Notes
