Description

A delightful dish that brings the flavors of street corn into a comforting and filling casserole with shredded chicken, sweet corn, and creamy ingredients.


Ingredients

  • 3 cups cooked shredded chicken
  • 3 cups corn (fresh, frozen, or canned)
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked shredded chicken, corn, sour cream, mayonnaise, lime juice, chili powder, garlic powder, paprika, salt, and pepper. Mix well until everything is combined.
  3. Spread the mixture evenly into a greased casserole dish.
  4. Sprinkle the shredded cheese on top of the mixture.
  5. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden.
