- 1 ½ cups sugar cookie dough
- 1 cup crushed sugar cookies (for crust)
- 2 tablespoons butter (melted)
- 16 oz cream cheese (softened)
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine crushed sugar cookies and melted butter. Press the mixture into the bottom of a springform pan to create the crust.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
- Pour the cheesecake batter over the crust and bake for 50-60 minutes, or until the center is set.
- Remove from the oven and let cool. Top with sugar cookie dough balls before serving.
Notes
Serve chilled, enjoy with whipped cream or extra cookie pieces. Can be stored covered in the refrigerator for up to 5 days or in the freezer for up to 2 months.
