Delightful cinnamon sugar cookies that are soft and chewy, perfect for any occasion.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and 1 cup of sugar until smooth.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Roll the dough into small balls.
- In a shallow dish, combine 1/4 cup sugar with cinnamon. Roll each ball of dough in the cinnamon sugar mixture.
- Place them on ungreased cookie sheets, spaced about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Remove from the oven, allow to cool slightly, then transfer to wire racks to cool completely.
<li Gradually add the dry ingredients to the butter mixture until combined.
Notes
Best enjoyed fresh out of the oven. Can be stored in an airtight container at room temperature for about a week.
