- 2 lb pork side ribs
- 8 cloves garlic (minced)
- 3 tbsp soy sauce
- 2 tbsp dark soy sauce
- 3 tbsp rice vinegar
- 2 tbsp ketchup
- 3 tbsp sugar
- 2 tbsp Chinese cooking wine (optional)
- 2 cups water
Instructions
- Cut the pork side ribs into cubes by following the bones.
- Cook the pork in boiling water for 3-4 minutes, then set aside.
- In a bowl, mix dark soy sauce, soy sauce, ketchup, rice vinegar, Chinese cooking wine, and sugar until the sugar is dissolved.
- Heat oil in a pan over medium-high heat. Once hot, add the pork and sauté for 3-4 minutes.
- Stir in the minced garlic and continue to sauté for another 1-2 minutes until fragrant.
- Pour in the sauce mixture and stir for 1-2 minutes until the pork is well-coated.
- Add 2 cups of water, bring to a simmer, then reduce heat to medium-low. Simmer for 30 minutes.
- Increase heat to high and cook uncovered for an additional 3-4 minutes to thicken the sauce.
Notes
Trim excess fat from the pork for better results and consider marinating the pork for deeper flavor.
