A delicious and healthy soup combining the natural sweetness of sweet potatoes and carrots.
Ingredients

- 2 large sweet potatoes, peeled and diced
- 4 medium carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 1/4 cup coconut milk (optional)
- Fresh cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced sweet potatoes and sliced carrots, stirring for a few minutes.
- Pour in the vegetable broth, and season with ground cumin, ground ginger, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer until the vegetables are tender, about 20-25 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in coconut milk if desired, and adjust seasoning as necessary.
- Garnish with fresh cilantro before serving.
Notes
Serve warm with crusty bread or a simple green salad. Adjust spices to your liking.
