Description

A delicious and healthy soup combining the natural sweetness of sweet potatoes and carrots.


Ingredients

Scale
  • 2 large sweet potatoes, peeled and diced
  • 4 medium carrots, peeled and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 1/4 cup coconut milk (optional)
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the diced sweet potatoes and sliced carrots, stirring for a few minutes.
  4. Pour in the vegetable broth, and season with ground cumin, ground ginger, salt, and pepper.
  5. Bring to a boil, then reduce the heat and simmer until the vegetables are tender, about 20-25 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in coconut milk if desired, and adjust seasoning as necessary.
  8. Garnish with fresh cilantro before serving.

Notes

Serve warm with crusty bread or a simple green salad. Adjust spices to your liking.
