Description

A delightful dish that transforms sweet potatoes into a comforting treat with a crunchy topping, perfect for gatherings and family meals.

Ingredients

Scale
  • 2 pounds sweet potatoes (about 4 medium, 4 cups mashed)
  • ½ cup whole milk
  • 2 large eggs
  • ½ cup granulated sugar
  • ¼ cup salted butter, melted
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup brown sugar
  • ½ cup all-purpose flour
  • 1 cup chopped pecans
  • ½ cup salted butter, softened

Instructions

  1. Scrub the sweet potatoes thoroughly and prick them with a fork. Bake at 425°F for 40-50 minutes until they are tender.
  2. Allow the sweet potatoes to cool slightly, then peel them and reduce the oven temperature to 350°F.
  3. In a mixing bowl, combine the mashed sweet potatoes, milk, eggs, granulated sugar, melted butter, salt, vanilla extract, and cinnamon. Mix until smooth and creamy.
  4. Spread the sweet potato mixture evenly in a greased 9×13 baking dish.
  5. In another bowl, mix the brown sugar, flour, and chopped pecans. Add the softened butter and mix until the mixture becomes crumbly.
  6. Sprinkle the crunchy streusel topping over the sweet potato filling, ensuring it is evenly distributed.
  7. Bake in the preheated oven for 40-45 minutes or until the casserole is set and the topping is golden brown.
  8. Allow the casserole to cool for 10 minutes before serving.

Notes

Choose the right sweet potatoes and allow the casserole to cool for better texture.
