Description

A warm, hearty casserole combining the earthy sweetness of sweet potatoes with savory sausage, perfect for family dinners and potlucks.


Ingredients

  • 3 large sweet potatoes, peeled and diced
  • 1 pound sausage (Italian or your choice), casings removed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onions and garlic, sauté until softened.
  3. Add the sausage to the skillet, cooking until browned and crumbled.
  4. In a large bowl, combine the diced sweet potatoes, cooked sausage mixture, chicken broth, salt, pepper, thyme, and paprika.
  5. Transfer the mixture to a greased casserole dish and cover with cheese.
  6. Bake for 30-40 minutes or until the sweet potatoes are tender and cheese is bubbly.
  7. Serve hot and enjoy!

Notes

For a vegetarian version, replace sausage with plant-based protein and use vegetable broth.
