- 3 large sweet potatoes, peeled and diced
- 1 pound sausage (Italian or your choice), casings removed
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the chopped onions and garlic, sauté until softened.
- Add the sausage to the skillet, cooking until browned and crumbled.
- In a large bowl, combine the diced sweet potatoes, cooked sausage mixture, chicken broth, salt, pepper, thyme, and paprika.
- Transfer the mixture to a greased casserole dish and cover with cheese.
- Bake for 30-40 minutes or until the sweet potatoes are tender and cheese is bubbly.
- Serve hot and enjoy!
Notes
For a vegetarian version, replace sausage with plant-based protein and use vegetable broth.
