- ½ cup pico de gallo
- ¼ cup guacamole
- 2 tbsp sour cream (or dairy-free alternative)
Instructions
- Preheat your oven to 425°F (220°C). Toss the cubed sweet potato with olive oil, smoked paprika, salt, and pepper until well coated. Spread in a single layer on a baking sheet and roast for about 15 minutes, then flip and roast for another 10-15 minutes until golden and tender.
- While the sweet potatoes are roasting, heat a skillet over medium heat. Add ground beef (or meat alternative), breaking it apart with a spatula. Cook until browned, then add taco seasoning and simmer for 2-3 minutes.
- Assemble bowls by dividing roasted sweet potatoes among them, topping with cooked beef, pico de gallo, guacamole, and sour cream. Garnish with cilantro, lime wedges, or crumbled cheese if desired.
