- 3 pounds sweet potatoes
- 1 1/4 cup heavy cream
- 6 tablespoons butter
- 6 cloves garlic (minced)
- 2 tablespoons fresh thyme (chopped)
- 1 teaspoon cornstarch
- 1/3 cup Parmesan cheese
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat the oven to 400°F. Pull the leaves off the thyme stems, discard the stems, and chop the leaves.
- In a small bowl or pot, combine the heavy cream and cornstarch, whisking well. Add the butter, minced garlic, chopped thyme, 1 1/4 teaspoons of salt, and 1/2 teaspoon of pepper, and heat until the butter melts, then whisk to combine.
- Peel and slice the sweet potatoes into very thin rounds (about 1/8-inch thick). Arrange slices in a 9×13-inch baking dish, fanning them out.
- Pour some of the cream mixture over the slices as you continue slicing the remaining sweet potatoes to prevent browning.
- Once all sweet potatoes are sliced and arranged, pour the remaining cream mixture over the top.
- Bake for 30 minutes. Sprinkle Parmesan cheese evenly over the top and bake for another 10 minutes until the cheese is golden and bubbly.
- Serve warm and enjoy!
