Description

A delightful combination of flavors and textures, Taco Beef Nachos make for an irresistible snack or a main dish, perfect for gatherings or cozy nights.


Ingredients

  • ½ tbsp olive oil
  • 1 onion, finely chopped
  • 250g beef lean steak mince (5 percent fat)
  • 30g taco seasoning
  • 400g tin black beans
  • 4 tbsp mild salsa dip
  • 270g lightly salted tortilla chips
  • 150g cherry tomatoes, quartered
  • 50g sliced jalapeños in brine, drained
  • 100g grated mozzarella and Cheddar mix
  • 1 red chilli, finely sliced
  • 2 spring onions, finely sliced
  • 200g sour cream and chive dip

Instructions

  1. Preheat the grill to medium-high.
  2. Heat the olive oil in a large frying pan over medium heat.
  3. Fry the onion for 5 minutes until softened and lightly golden.
  4. Add the mince, breaking it up with a wooden spoon, and fry for another 5 minutes until golden brown.
  5. Mix in the taco seasoning and cook for 2 minutes, stirring to toast the spices.
  6. Pour in the black beans (including the water) and cook for 5 minutes until thickened.
  7. Remove from heat and stir through the salsa dip.
  8. Arrange the tortilla chips on a large baking tray.
  9. Spoon the beef taco mixture onto the chips, leaving some around the edges empty.
  10. Sprinkle over the cherry tomatoes, sliced jalapeños, and cheese.
  11. Place under the grill for 5 minutes until the nachos are crispy and the cheese is melted.
  12. Finally, sprinkle with red chilli and spring onions. Serve with the sour cream dip.
