Ingredients

- 2 cups cooked chicken, shredded
- 2 cups corn, fresh or canned
- 1 cup cooked rice or quinoa
- 1 bell pepper, diced
- 1/2 cup red onion, diced
- 1 avocado, diced
- 1 lime, juiced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine shredded chicken, corn, rice or quinoa, bell pepper, and red onion.
- In a small bowl, mix lime juice, chili powder, cumin, salt, and pepper.
- Pour the dressing over the chicken mixture and toss to combine.
- Serve in bowls and top with diced avocado and fresh cilantro. Enjoy!
Notes
Use leftover chicken for quick prep and grill the corn for extra flavor. Feel free to substitute chicken with shrimp or tofu.
