Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 cup cooked chicken, shredded
  • 1 cup pineapple chunks
  • 1/2 cup teriyaki sauce
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine cooked rice, shredded chicken, pineapple chunks, teriyaki sauce, green onions, garlic, salt, and pepper.
  4. Stuff each bell pepper with the rice mixture.
  5. Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with foil.
