- 4 bell peppers
- 1 cup cooked rice
- 1 cup cooked chicken, shredded
- 1 cup pineapple chunks

- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine cooked rice, shredded chicken, pineapple chunks, teriyaki sauce, green onions, garlic, salt, and pepper.
- Stuff each bell pepper with the rice mixture.
- Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with foil.
- Bake in the preheated oven for 25-30 minutes until the peppers are tender.
- Remove the foil and bake for an additional 10 minutes to crisp the tops.
- Serve warm.
