Description

A delightful twist on traditional pumpkin pie, these cookies combine warm pumpkin flavors with spices into bite-sized treats, perfect for holiday celebrations.


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 egg
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Gradually mix in the flour and salt until combined.
  4. In another bowl, mix the pumpkin puree, brown sugar, pumpkin pie spice, egg, and cornstarch until smooth.
  5. Roll dough into small balls and press them into greased mini muffin tins.
  6. Fill each shell with the pumpkin filling.
  7. Bake for 15-20 minutes until the edges are lightly golden.
  8. Allow to cool before removing from the tins.
  9. Serve and enjoy!

Notes

For extra indulgence, add a dollop of whipped cream on top before serving. Store in an airtight container for up to three days.
