- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1 teaspoon pumpkin pie spice
- 1 egg
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and powdered sugar until light and fluffy.
- Gradually mix in the flour and salt until combined.
- In another bowl, mix the pumpkin puree, brown sugar, pumpkin pie spice, egg, and cornstarch until smooth.
- Roll dough into small balls and press them into greased mini muffin tins.
- Fill each shell with the pumpkin filling.
- Bake for 15-20 minutes until the edges are lightly golden.
- Allow to cool before removing from the tins.
- Serve and enjoy!
Notes
For extra indulgence, add a dollop of whipped cream on top before serving. Store in an airtight container for up to three days.
