- 1 pound ground turkey
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic; sauté until the onion is translucent.
- Add the ground turkey to the pot and cook until browned, breaking it apart as it cooks.
- Stir in the diced tomatoes, chicken broth, rice, oregano, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork, mix in fresh parsley, and serve hot. Top with grated Parmesan cheese if desired.
Notes
Serve hot with a sprinkle of extra parsley or a dash of pepper for garnish. Pairs well with a green salad or crusty bread.
