Description
Delicious vegan pastries filled with baked apples and caramel, all wrapped in flaky puff pastry.
Ingredients

- 2 sheets of puff pastry
- 30g of caster or granulated sugar
- 2 heaped teaspoons of ground cinnamon
- 4 large apples
- Dairy-free milk (for brushing)
- Vegan caramel sauce (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and core the apples, then cut them into small chunks.
- In a bowl, combine the caster sugar with the ground cinnamon.
- Toss the apple chunks with the sugar-cinnamon mixture.
- Unroll the puff pastry sheets on a lightly floured surface.
- Cut each sheet of puff pastry into 4×4 inch squares.
- Place the apple mixture in the center of each pastry square, drizzle with vegan caramel if desired.
- Fold the pastry corners over the filling to seal.
- Brush the tops of the pastries with dairy-free milk.
- Bake in the preheated oven for 20-25 minutes until golden brown.
- Allow to cool slightly before serving.
Notes
For a golden finish, brush tops with dairy-free milk. Keep puff pastry chilled until ready to shape.
