- 2 cups mixed dried fruits (raisins, currants, sultanas)
- 1 cup chopped nuts (walnuts, almonds)
- 1 cup unsweetened applesauce
- 1/2 cup vegan butter
- 1 cup brown sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup plant-based milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a cake pan.
- In a mixing bowl, combine the dried fruits and chopped nuts.
- In another bowl, cream together the vegan butter and brown sugar until light and fluffy.
- Mix in the applesauce and vanilla extract.
- In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the plant-based milk, until well combined.
- Fold in the fruit and nut mixture.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving and enjoy the festive flavors!
Notes
Best served with a dusting of powdered sugar or a drizzle of vegan frosting. Can be served with tea or coffee.
