Description

This Vegan Christmas Cake is rich, moist, and packed with fruity goodness, perfect for celebrating the holiday season without animal products.


Ingredients

  • 2 cups mixed dried fruits (raisins, currants, sultanas)
  • 1 cup chopped nuts (walnuts, almonds)
  • 1 cup unsweetened applesauce
  • 1/2 cup vegan butter
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup plant-based milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a mixing bowl, combine the dried fruits and chopped nuts.
  3. In another bowl, cream together the vegan butter and brown sugar until light and fluffy.
  4. Mix in the applesauce and vanilla extract.
  5. In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the plant-based milk, until well combined.
  7. Fold in the fruit and nut mixture.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before serving and enjoy the festive flavors!

Notes
