- 3/4 cup lime juice
- 1/4 cup packed mint leaves (plus extra for garnish)
- 1/2 cup sugar
- 1/2 cup white rum
- 1/2 cup coconut rum
- 1 cup canned coconut milk
- Sparkling water
- Pomegranate arils
Instructions
- In a large pitcher, muddle the mint leaves with sugar and lime juice to release the flavors.
- (Optional: Strain out the mint leaves for a smoother drink.)
- Fill four glasses halfway with ice, then pour the coconut rum mixture until each glass is about 3/4 full.
- Fill each glass with sparkling water.
- Garnish with fresh mint and pomegranate arils, and enjoy!
