Creamy, cozy, and packed with flavor — this white chicken lasagna soup is a slow cooker dream with spinach, cheese, and tender noodles.
Ingredients
1 lb chicken breasts
1/2 onion, chopped
3 garlic cloves
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
6 cups chicken broth
10 oz lasagna noodles, broken
4 oz cream cheese
1/2 cup heavy cream
1 cup mozzarella
1/2 cup parmesan
2 cups baby spinach
Instructions
1. Add chicken, onion, garlic, broth, and seasoning to crockpot.
2. Cook on LOW for 6 hours.
3. Shred chicken and return to pot.
4. Stir in noodles, cook on HIGH 30–40 minutes.
5. Add cream cheese, cream, mozzarella, and parmesan.
6. Stir in spinach until wilted. Serve hot.
Notes
Use rotisserie chicken for quicker prep.
Add white beans for heartier soup.
Cream cheese melts better at room temperature.
