Ingredients

- 2 cups wild mushrooms, chopped
- 1 large onion, sliced
- 2 cups kale, chopped
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon thyme (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced onions and caramelize for about 10-15 minutes, stirring occasionally.
- Add minced garlic and chopped mushrooms, and cook until mushrooms are tender.
- Pour in the vegetable broth and bring to a simmer.
- Add the chopped kale and thyme (if using) and cook for an additional 5-10 minutes until the kale is wilted.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
For richer flavor, use a variety of wild mushrooms. Store leftovers in an airtight container for up to three days.
