Description

Ingredients

Scale
  • 2 cups wild mushrooms, chopped
  • 1 large onion, sliced
  • 2 cups kale, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced onions and caramelize for about 10-15 minutes, stirring occasionally.
  2. Add minced garlic and chopped mushrooms, and cook until mushrooms are tender.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the chopped kale and thyme (if using) and cook for an additional 5-10 minutes until the kale is wilted.
  5. Season with salt and pepper to taste.
