Ingredients

- 1 can of beans (chickpeas or white beans)
- 1 jar of Castelvetrano olives, pitted and halved
- 1 can of artichoke hearts, drained and quartered
- 2 cloves of garlic, minced
- 2 tablespoons za’atar spice
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large bowl, combine the drained beans, Castelvetrano olives, and artichoke hearts.
- In a separate bowl, whisk together the minced garlic, za’atar, olive oil, lemon juice, salt, and pepper to create the marinade.
- Pour the marinade over the bean mixture and toss to coat.
- Let the salad sit for at least 15 minutes for the flavors to meld.
- Garnish with fresh parsley if desired before serving.
