Description

A vibrant salad that combines earthy flavors of beans with the aromatic spice blend za’atar, perfect for any meal.


Ingredients

Scale
  • 1 can of beans (chickpeas or white beans)
  • 1 jar of Castelvetrano olives, pitted and halved
  • 1 can of artichoke hearts, drained and quartered
  • 2 cloves of garlic, minced
  • 2 tablespoons za’atar spice
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large bowl, combine the drained beans, Castelvetrano olives, and artichoke hearts.
  2. In a separate bowl, whisk together the minced garlic, za’atar, olive oil, lemon juice, salt, and pepper to create the marinade.
  3. Pour the marinade over the bean mixture and toss to coat.
  4. Let the salad sit for at least 15 minutes for the flavors to meld.
  5. Garnish with fresh parsley if desired before serving.

For best flavor, chill the salad for about 30 minutes before serving.
