- 1 cup almonds
- 1 cup shredded coconut (unsweetened preferred)
- 2 tablespoons honey
- 1 teaspoon vanilla extract
Instructions
- Combine dried apricots and almonds in a food processor until finely chopped.
- Add shredded coconut, honey, and vanilla extract to the mixture and blend until a sticky dough forms.
- Roll the mixture into small balls.
- Roll the balls in additional shredded coconut if desired.
- Refrigerate for at least 30 minutes before serving.
Notes
For vegan, substitute honey with maple syrup. For nut-free, replace almonds with sunflower seeds or pumpkin seeds.
