Description

A delightful dessert combining the sweet and tangy flavors of fresh apricots with a tender cake batter.


Ingredients

  • 1 cup fresh apricots, pitted and chopped
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional for topping)
  • Additional sugar for sprinkling on top (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour a 9-inch square baking pan or similar size.
  2. Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
  3. Cream together the softened butter and sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
  4. Add the egg, vanilla extract, and milk to the butter mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  6. Fold in the chopped apricots gently.
  7. Pour the batter into the prepared baking pan, spreading it evenly.
  8. If desired, sprinkle ground cinnamon and a bit of extra sugar over the top.
  9. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted comes out clean.
  10. Allow the buckle to cool in the pan for about 10 minutes before slicing and serving.

Notes

Using ripe apricots enhances flavor; do not overmix the batter for a tender cake.
