- 1 cup fresh apricots, pitted and chopped
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder

- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional for topping)
- Additional sugar for sprinkling on top (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and lightly flour a 9-inch square baking pan or similar size.
- Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
- Cream together the softened butter and sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
- Add the egg, vanilla extract, and milk to the butter mixture. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Fold in the chopped apricots gently.
- Pour the batter into the prepared baking pan, spreading it evenly.
- If desired, sprinkle ground cinnamon and a bit of extra sugar over the top.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted comes out clean.
- Allow the buckle to cool in the pan for about 10 minutes before slicing and serving.
Notes
Using ripe apricots enhances flavor; do not overmix the batter for a tender cake.
