- 2 cups apricots, halved and pitted
- 4 large eggs
- 1 cup milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3/4 cup all-purpose flour
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- Arrange the apricot halves in the bottom of the dish.
- In a bowl, whisk together the eggs, milk, sugar, vanilla extract, and salt until well combined.
- Gradually whisk in the flour until smooth.
- Pour the batter over the apricots in the dish.
- Bake for 35-40 minutes or until the top is golden and a toothpick comes out clean.
- Allow to cool slightly before dusting with powdered sugar and serving.
Notes
For best results, use ripe apricots. Optionally, substitute half of the milk with heavy cream for a richer taste.
