Description

A delightful French dessert featuring ripe apricots in a light, custardy batter, perfect for warm or room temperature serving.


Ingredients

Scale
  • 2 cups apricots, halved and pitted
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose flour
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Arrange the apricot halves in the bottom of the dish.
  3. In a bowl, whisk together the eggs, milk, sugar, vanilla extract, and salt until well combined.
  4. Gradually whisk in the flour until smooth.
  5. Pour the batter over the apricots in the dish.
  6. Bake for 35-40 minutes or until the top is golden and a toothpick comes out clean.
  7. Allow to cool slightly before dusting with powdered sugar and serving.

Notes

For best results, use ripe apricots. Optionally, substitute half of the milk with heavy cream for a richer taste.
