- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup apricot preserves
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan.
- Mix together rolled oats, flour, brown sugar, granulated sugar, melted butter, salt, and vanilla extract until crumbly.
- Reserve 1 cup of the mixture for topping and press the rest into the bottom of the prepared baking pan.
- Spread apricot preserves evenly over the crust.
- Sprinkle the reserved crumb mixture and cinnamon over the top.
- Bake for 25-30 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
For best results, chill the base slightly before adding the preserves and use room-temperature melted butter.
