Description

Bright, tender, and tangy-sweet Apricot Yogurt Muffins are perfect for breakfast or a midday snack.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup plain yogurt
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup diced apricots

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
  3. Whisk together yogurt, vegetable oil, egg, and vanilla extract in another bowl.
  4. Combine the wet ingredients with the dry ingredients, mixing until just combined.
  5. Fold in diced apricots.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool before serving.

Notes

Measure flour correctly to prevent dry muffins. Don’t overmix and watch the bake time.
