- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup plain yogurt
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup diced apricots
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
- Whisk together yogurt, vegetable oil, egg, and vanilla extract in another bowl.
- Combine the wet ingredients with the dry ingredients, mixing until just combined.
- Fold in diced apricots.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
Measure flour correctly to prevent dry muffins. Don’t overmix and watch the bake time.
