Ingredients

1 1/2 cups warm water
1 tsp salt
1/4 tsp ground cumin (optional)
2 tbsp vegetable oil (plus extra for frying)
2 cups shredded chicken or beef
1 cup diced red or white onion
1 cup chopped fresh cilantro


Instructions

Mix masa harina, warm water, salt, and 2 tbsp oil until smooth
Knead dough for 2-3 minutes until firm
Rest dough for 10 minutes
Roll into 12 discs, 1/4-inch thick
Heat 1/2 inch oil in skillet to 350°F
Fry discs 2-3 minutes per side until golden
