Ingredients

  • 2 cups pasta (like fusilli or rotini)
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup shredded carrots
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and let cool.
  2. Blanch the broccoli florets in boiling water for 2-3 minutes, then drain and cool them in ice water.
