Ingredients

- 2 cups pasta (like fusilli or rotini)
- 2 cups broccoli florets
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup shredded carrots
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions; drain and let cool.
- Blanch the broccoli florets in boiling water for 2-3 minutes, then drain and cool them in ice water.
- In a large bowl, combine the cooled pasta, broccoli, cherry tomatoes, red onion, shredded carrots, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill before serving, and enjoy at summer picnics or potlucks!
