Ingredients
1 1/2 cups all-purpose flour
1 tsp cornstarch
1/4 tsp salt
3/4 tsp baking powder
1/2 cup unsalted butter, chilled and cubed
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
3/4 cup white chocolate, chopped
3/4 cup blueberries (frozen preferred)
1/2 cup cream cheese, softened
1 tbsp powdered sugar
1/2 tsp vanilla extract
1/4 cup jam
Instructions
Preheat oven to 350°F (180°C)
Whisk flour, cornstarch, salt, and baking powder
Cream butter and sugar until smooth
Add egg and vanilla, mix on low speed
Incorporate dry ingredients gradually
Fold in white chocolate and 2/3 of blueberries. Chill dough for 2 hours
Blend cream cheese, powdered sugar, and vanilla. Refrigerate until ready to use
Portion 1 tbsp dough into palm, add 1 tsp cream cheese filling, 1/2 tsp jam, and 1/4 tbsp top dough to enclose. Seal edges
Place cookies on parchment-lined sheets. Freeze 10 minutes if needed to prevent spreading
Bake 18 minutes until edges are lightly golden. Cool on sheets
Notes
Chill dough for at least 2 hours
Test one cookie at 16 minutes for precise baking
Use frozen blueberries to minimize juice
Replace raspberries with blueberries and add 1-2 tbsp extra sugar
