Ingredients
Russet potatoes, 2 lbs, chopped
Kosher salt, 4 tbsp
Garlic powder, 1 tsp
Medium tomatoes, 8 oz
Ground cumin, 1 tsp
Chili powder, 1 tsp
Dried oregano, 1 tsp
Vegetable oil, 2 tbsp
Sharp cheddar cheese, 1 cup, shredded
Corn or flour tortillas, 16 medium
Olive oil, for frying
Black pepper, to taste
Yellow onion, ½ small, finely chopped (optional)
Lime wedges, for serving (optional)
Instructions
Bring salted water to a boil in a large pot
Add chopped potatoes and cook for 15 minutes until tender
Drain and mash with salt, garlic powder, and ½ the cheese
Blanch tomatoes with skins until softened, peel, and blend with tomatoes, cumin, chili powder, oregano, oil, onions, and water to make sauce
Simmer sauce 5 minutes to thicken
Heat tortillas on a dry skillet, fill with cheese-potato mixture, fold, and fry until golden
Serve tacos with sauce and lime wedges
